Job description

Key tasks

• Manage and supervise the daily operations of culinary department
• Ensure department's food preparation, production and presentation meet quality standards
• Maintain efficient labor and food cost control
• Conducts checks to ensure compliance hygiene, storage, cleanliness and par-stock levels for all areas
• Assists Executive Chef with people management and discipline of department staff including induction of new staff
• Create periodic, seasonal and festive menus

Essential and optional requirements

• Diploma in Food, Nutrition & Beverage or equivalent with certificate in food handling and food hygiene
• Minimum 10 years’ experience in hotel or institutional catering with at least 3 years’ experience in a similar role (Executive Sous Chef)
• Strong understanding of Asian Culture
• Self-Driven and able to independently manage the team
• Excellent knowledge of kitchen operations with strict controls on HACCP procedures
• Decision Maker
• Understanding of budgeting and P&L, cost control and Human Resources processes and procedures
• Able to speak and write professionally in English / Chinese or Cantonese
• Competent in Microsoft Office Applications
